  2. Cover the container and refrigerate overnight.
  3. In the morning, top with your favorite toppings and enjoy!

2. Breakfast Smoothie

Ingredients:
  • 1 banana
  • 1 cup frozen fruit (e.g. mixed berries, mango chunks)
  • 1 cup almond milk
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon almond butter (optional)
  • ½ teaspoon vanilla extract
Instructions:
  1. Add all the ingredients to a blender and blend until smooth.
  2. Pour into a glass and enjoy!

3. Breakfast Burrito

Ingredients:
  • 1 tortilla
  • 2 eggs, scrambled
  • ¼ cup black beans
  • ¼ cup shredded cheddar cheese
  • Salsa, avocado, and/or sour cream for topping
Instructions:
  1. In a pan over medium heat, scramble the eggs until cooked through.
  2. Warm the tortilla in the microwave or on a skillet.
  3. Once the tortilla is warm, add the scrambled eggs, black beans, and shredded cheese inside.
  4. Roll the tortilla up into a burrito shape.
  5. Top with salsa, avocado, and/or sour cream, if desired.

4. Peanut Butter and Banana Toast

Ingredients:
  • 1 Slice of bread (white or whole wheat)
  • 2 Tablespoons of peanut butter
  • 1 Banana, sliced
  • Honey (optional)
Instructions:
  1. Toast the bread.
  2. Spread peanut butter evenly on top.
  3. Arrange banana slices on top of the peanut butter.
  4. Drizzle honey on top, if desired.

5. Veggie Omelette

Ingredients:
  • 2 Eggs
  • 1/4 Cup of diced vegetables (e.g. bell peppers, onions, mushrooms)
  • 1/4 Cup of shredded cheese
  • Salt and Pepper (to taste)
  • Cooking spray or butter

Instructions:
  1. In a bowl, beat eggs, and a pinch of salt and pepper until fully mixed.
  2. Heat a non-stick skillet over medium heat and add cooking spray or butter.
  3. Add the diced vegetables and cook until they are slightly softened.
  4. Pour the eggs over the vegetables and let it cook until the bottom becomes firm.
  5. Add the shredded cheese on top.
  6. Use a spatula to fold the omelette in half.
  7. Cook until the cheese is melted and the egg is fully cooked.

6. Breakfast Baked Potato

Ingredients:
  • 1 Baked Potato
  • 1 Egg
  • 1 Slice of cooked bacon
  • 1/4 Cup of shredded cheese
Instructions:
  1. Preheat the oven to 400F.
  2. Cut the baked potato in half lengthwise and scoop out some of the inside to make space for the toppings.
  3. Crack the egg into the potato.
  4. Crumble the bacon on top of the egg and sprinkle with shredded cheese.
  5. Bake in the oven for about 10-12 minutes, or until the egg is cooked to your liking.

7. Avocado Toast

Ingredients:
  • 1 slice of whole grain bread
  • ½ avocado
  • 1 egg
  • Salt and pepper to taste
Instructions:
  1. Toast the bread.
  2. Mash the avocado onto the toasted bread.
  3. Fry the egg and place it on top of the avocado.
  4. Add salt and pepper to taste.

8. Banana Pancakes

Ingredients:
  • 1 ripe banana
  • 1 egg
  • ½ teaspoon of baking powder
  • 1 tablespoon of flour

  1. Mash the banana and mix it with the egg.
  2. Add the baking powder and flour, and mix until well combined.
  3. Heat a non-stick pan over medium heat.

  5. Top with your favorite fruits and syrup.

9. Greek Yogurt Parfait

Ingredients:
  • 1 cup of Greek yogurt
  • 1 cup of mixed berries
  • ½ cup of granola
Instructions:
  1. In a small bowl or jar, layer yogurt, berries, and granola.
  2. Serve immediately or store in the fridge overnight.

10. Egg and Cheese Bagel Sandwich

Ingredients:
  • 1 bagel
  • 1 egg
  • 1 slice of cheddar cheese
Instructions:
  1. Cut the bagel in half and toast it.
  2. Fry an egg to your liking.
  3. Add the cheese on top of the cooked egg.
  4. Put the egg and cheese on a toasted bagel.
